I WISH ...instead of pizza delivery, I could phone someone to bring me a spaghetti squash.


ROASTED SPAGHETTI SQUASH

with ORGANIC TOMATO SAUCE
SALAMI FINOCHIONNA, WILD ROCKET
and FARMER'S GOAT CHEESE

ROAST the SQUASH:
Cut the Spaghetti Squash in half,
remove seeds. Brush both skin and
cut sides with Olive Oil.

Place on a sheet pan and roast
cut side up at 350 for approx 40 min
or until flesh is crisp and toasty.


MAKE the SAUCE:

Saute 1/2 vidalia onion, diced and 2 T garlic, diced.
Splash in about a 1/4 cup good white wine; let reduce.
[For a 'robust' sauce; use a light red wine such as Pinot].
Add 2 T sugar OR agave nectar and 1.5 T sea salt & pepper.
Add Meir Glen or Bionaturae Organic canned tomatoes.
...use 15oz crushed and 8oz diced ...let simmer.
Add 4 to 6 fresh basil leaves, torn. Adjust seasonings.



PREPARE the SALAMI FINOCHIONNA
THIN slice the SALAMI and quickly crisp in a saute pan.
Plate spaghetti squash; top with roasted tomato sauce
a chiffonade of wild rocket [AKA wild arugula]
and a crumble of farmer's goat cheese...
